It is the first olive to be harvested, usually at the beginning of autumn, before the ripening cycle of the olive, or as it is traditionally said,’ before it begins to paint’. After harvesting and selection, the olives are placed in jars with brine for a minimum of 6 months, which is when the fermentation takes place. Once ready, they are packed with fresh brine in small batches. In the mouth, its flavour is intense and balanced with a characteristically astringent sensation.
